Watch a video on how to carve it. The grain turns at an almost 90 degree angle halfway through. I’d eaten a ton of it at my in laws and finally made my own a while back and learned how to correctly cut it. Made a difference. Also unsure if my father in law really knows what temperatures of doneness things really look like
One of my favorite meals at home is to smoke a tri tip. Doesn’t take long, is delicious, and great bang for your buck for how much you get. Usually have enough to make some breakfast burritos for the leftovers.
The cutting of the grain is absolutely key. Good callout.
Just for like an hour or so to make it a bit easier to handle with the sealer. Not long enough to form like ice crystals or what not. Less messy.

Yah I don’t have to worry about using the “moist” setting on the food saver and cleaning out that drip tray.
Before I had my vacuum sealer I would do the same. Freeze meats individually for an hour or so then double wrap with plastic wrap individually then into a freezer bag.
Wife bought some New Yorks from Costco today. Hour or so on the smoker, 1 minute or so on both sides at 700* on the sear box. Pretty good.
Tell me more about that oven, please. I’ve been eyeing it for a bit, but haven’t pulled the trigger yet.
Yea not sure how I see the difference between it and broiling 45 seconds a side top rack in a regular oven but would love to hear more.
Is this the Breville one? I have that one at my place in Michigan and love it. Mrs. Chili said no to having it at our Tennessee house as I have 2 full size ovens. Not the same tho. The Breville one is so dialed and efficient. Love it.

It also can replace your toaster and air fryer. It is quite big so it will always be on your counter top. Also, if you have an older house (our place in MI is over 100 years old) it can’t be on the circuit as your microwave if you want to use both at the same time. However, it’s still so worth it especially if you can stalk the sales and get a great value.
This was actually what started me down this path. My air fryer is fine, but is showing its signs of aging and it’s getting to be time for a new toaster.
It is. When we moved we did not bring our 20+ year old toaster. We also didn’t own an air fryer (and i really don’t like those basket type ones) - so we opted to get an appliance that can do it all and we splurged. We got the Smart Oven Air Fryer Pro just after we moved in (it was on sale at the time) and use it constantly - I hardly turn my big oven on unless we are doing really big batches of sheet pan meals or I am in cookie baking mode.
It heats up super quickly (way quicker than the full-size wall oven here). The air frying is great. I use it to roast smaller batches of veggies, reheat leftovers quicker than the full big oven, toast up to about 8 slices of bread at a time, heat up frozen chicken strips for salads/pastas with out me having to tend to them on the stovetop (and have a better texture than the microwave). Literally, anything I could normally do in the big oven, I can do with this, but faster. It crisps up frozen apps in the air fryer basket really well and at a big enough capacity for me and the hubs. It can hold a 14lb turkey! I have an outdoor pizza oven, so I haven’t tested doing my own homemade pizza in it, but doing frozen pizza is easy and this holds up to a 13" one. I do love using it to bake up frozen baguettes or rolls quickly too.
Now, my in-wall oven is also a convection oven, but it takes so long to heat up/come to temperature, and it’s just the two of us, so we aren’t making giant things that require the big oven that often. And we live where it is routinely over 100*, so I don’t really want to have the big oven on longer than needed.
It’s wirecutters #1 pick for a combo of air fry/toaster oven with the caveat that it is pricy, but like I said, we use it pretty much daily and I like having an all in one instead of multiple appliances.
I like using cast iron for the reverse sear. I add a bit of butter to the pan as I do the sear for some additional flavor and I like the crust I get from the super high heat of the cast iron pan.
Looks like it would be great in the sprinter camper van I have in my dreams for retirement.

I am a disappointment. I only bought one. I gotta figure out where the third TV will go … and also figure out how to rectify the quarter inch discrepancy between the TVs. I leveled both of them when installing to the wall because I’m very particular … and yet they’re still just barely off from each other and it’s driving me crazy
