Okay now that’s just a declaration of war. Geese are pretty awful. They’ve been especially nasty here this spring as they’ve been bringing the next generation of horrible bird monsters into the world.

Back when I used to work for the DPW, the geese would be down by the duck pond all the time. We were able to put up a string about 6 in off the ground around the pond so they wouldn’t land in there but they would still be all around the sidewalk crapping all over the place. So once a week I would have to hook a fire hose up to two different fire hydrants and hose off the entire sidewalk.

Our WhatsApp group chat recently debated what’s our national food or dish. Poutine seems like the natural option but maple syrup would be a stronger contender if it wasn’t better classified as a condiment.

I’ll give 3 options since I love duck.

First, you can’t go wrong with a simple skillet duck breast. Skim off the rendered fat to use in your sides.

Duck confit, simply amazing.

For our above the border friends I’ll offer the “Duck in a Can” at Au Pied de Cochon in Montreal. Over the top in many ways but worth it.
