I’ll kick off part 2.

Was a small 3 person Thanksgiving this year, so had a butcher fully debone a smaller bird. Cooked the light and dark meat separately and made a turkey demi Glace for the sauce. Im not sure if it was a lean bird or what, but it came out a lot drier than expected even after only cooking for about an hour. I think I’ve settled on spatchcocking as the happy medium between whole roast bird and fully deboned bird.

Had some friends round to give them a taste of Thanksgiving here in Australia. My wife pulled out most of the classics & I assisted. Also dropped a Pumpkin cheesecake in for good measure.

Started the holiday baking this past weekend.

Experimented with some “icebox” type cookies. They are VERY chocolate-y.

Did two kinds of choc chips, cream cheese cookies, roll out sugar cookies anf gingerbread.

Froze most of the doughs so I can Bake off as needed for holiday gifts and shindigs all month.

I’m awful at photos and presentation. Leftover turkey was perfect for pot pie. So good!

After thanksgiving, we quickly transitioned to chili szn.

And after an overall okay, but personally disappointing smoked turkey for Thanksgiving, I’ve vowed to hit the lab and perfect process over the next 360 days. First edits already proving better results.

I’m wanting to get into the smoker game. Does anyone have any recommendations on pellet smokers that are quality but hopefully not a months salary?
